Ingredients
For the muffins:
2 KANAKI COUNTRY STYLE Filo Pastry Sheets
Olive oil for the sheets
6 prosciutto slices
1 tbsp chive, minced
For the stuffing:
2 tbsp butter
2 tbsp all-purpose flour
350-400 gr. milk
2 eggs
150 gr. kasseri cheese, grated
4 prosciutto slices, minced
2 tbsp cream cheese
2 tbsp chive, minced
Salt-pepper
Preparation - Steps
For the stuffing:
Heat the butter in a shallow saucepan, add the flour and roast for 2 min; gradually pour the milk and leave it to cook, stirring constantly until the cream thickens.
Remove from the fire and leave it aside for 5-10 min to cool down. Then, add the eggs, salt, pepper, cream cheese, kasseri, prosciutto and chive, and stir very well.
Assembly
Lay the sheet with the horizontal (larger side) as a base and cut in 3 equal horizontal strips. Then, cut them in 4 equal vertical strips, to form 12 small squares.
Repeat the same procedure with the second sheet.
Smear a cupcake form pan with olive oil, using a cooking brush. Smear 1 square with olive oil and place it on the bottom of the cupcake form pan. Then, add ½ prosciutto slice on top and cover with a second square, smeared with olive oil.
Repeat the same procedure with all the sheets.
Fill each “muffin” with the stuffing. Bake in a preheated oven at 180°C for approx. 20-25 min, until they rise and turn golden brown.
Remove from the oven, sprinkle with the chive and serve.
