Ingredients
1 package KANAKI PUFF Pastry
500 gr. zucchini
1 spring onion, minced
200 gr. cherry tomatoes, cut in half
300 gr. feta cheese, crushed with a fork
200 gr. katiki cheese from Domokos
100 gr. graviera cheese, ground
2 medium eggs
2 tbsp fresh mint leaves, minced
2 tbsp olive oil
1 small cup milk
Salt, pepper
Preparation - Steps
Peel the zucchini and grind them on a coarse grater. Place them in a strainer and let them strain.
In a small saucepan, heat the olive oil and saute the onion for 3-4 min, until it softens.
Add the zucchini, cherry tomatoes, salt and pepper, and cook until they soften and absorb their liquids.
Remove the saucepan from the fire, add the mint and cheese, and stir.
In a large bowl, beat the eggs, add the milk and pour into the zucchini mixture.
Preheat the oven at 180 °C and lay the Puff Pastry in a 26cm tart pan, making sure you cover both the bottom and sides; open a few holes in the bottom with a hole. Add the stuffing and bake for 40 min.
